Has the chef destroyed their taste buds by drinking hard liquor, smoking cigarettes, and eating carolina reaper peppers everyday? if no then I'd rather wasabi to my own taste

I've eaten a lot of sushi in Tokyo and never once this pretentious shit about "balance" was ever mentioned.

I mean it’s not like they put it on the menu. It’s not pretentious it’s just how the cuisine is. If you don’t care to learn/talk about your food and just want to eat it that’s fine, everyone enjoys different stuff.

Both can exist, just maybe don’t spend a lot of money on fancy dining experiences if you don’t care. Eat good food and enjoy it however you like.

You're the one talking about not adding wasabi to your sushi because the chef made it with "perfect balance" on it already.

You really need to distinguish between the trash that is dyed horseradish and actual wasabi. I’d guess most have not eaten real wasabi because it’s so expensive; I won’t eat the other stuff.

I dunno if it ever got to ulcer bad but I definitely did some damage. I healed up after cutting back on the hot sauce and not falling asleep with a stomach full of liquor.

You could just not go to the more traditional sushi places in Japan and no one would care in any other setting. It’s kinda more weird to go to the place with the etiquette rules just to be a contrarian than it is for a place known for tradition to ask you mind their etiquette rules.
