Most japanese dont do any of these things in the video either lol. In a traditional setting, you wouldn't mix wasabi directly in your shoyu but just like you saw at Toyosu, nobody really cares if you're just eating kaitenzushi (conveyer belt type spots) or other common places.
A fancy place will usually tell you how they prefer you to enjoy the dish. For the last sushi I've seen them also say dip so part of the rice gets soy sauce or only the rice
