A fancy place will usually tell you how they prefer you to enjoy the dish. For the last sushi I've seen them also say dip so part of the rice gets soy sauce or only the rice

We went to a nice sushi place with a Japanese friend and sat at the chefs counter, he told us what to eat (we could obv say no) and how to eat it.

Best sushi experience of my life. Also the most expensive (but worth it.)

The best part of an omakase experience is becoming buddy with the chef and letting him guide your experience.

It’s even better if your chef also likes beer and you can cheers with every good bite.
