Honey going bad?
I love and seek out local honey and while it’s only happened twice, sometimes my honey goes bad. I’m almost certain it has been from moisture getting into the honey. Though I’m not sure how. Both times the honey has been stored in a cool dark pantry. I keep my house at about 69° and the pantry isn’t closed to any major source of heat. The appearance has been both normal and a thicker cloudy honey but both have had the slightest smell of urine and an ammonia taste. Is the honey fermenting? Am I storing it wrong? Is there a way to prevent this?
