That Gerson lore is exclusive to Undertale, and the human-monster war that happened there. In Deltarune, Gerson has a wife and son.

Edit: LMAO this is his mom, actually. Didn't even consider the possibility that either of Gerson's parents could be alive. Disregard this, Gerson is still single AF even in Deltarune.
Can't really blame you honestly, so many people kinda just assumed that it is Gerson's wife without a second thought that it kinda became engraved into the minds of everyone in the fandom.
I hope this changes one day when we'll all have a better understanding of the story.
My thing is that I had kinda just ruled out the idea of Gerson's parents being alive at all. Gerson's main bit in Chapter 4 is "I'm Old!", he's also extremely old in Undertale, and even Alvin seems to be an older sort of guy (although that could just be vibes-based, TBF). With Gerson as old as he is, the idea that his even more ancient mother outlived him was something I never even considered.
I figured her name was "Ms." Boom because Gerson is dead, thus she is no longer married, but she kept the surname. But yeah, the "grandmaboom" file name is damning evidence.
It could be possible that the deltarune universe has one of undertale's world rules, the whole "monsters grow older by literally taking the life/energy from their parents, so as the children grow the parents get older" and because asriel and chara died Toriel and Asgore stopped aging, so maybe because Gerson died, Ms. Boom stopped aging. Maybe she's immortal til she gets killed now.
That's specific to Boss Monsters, though. As far as we're aware, Gerson's lineage aren't Boss Monsters (after all, the only ones we've seen are the Dreemurr family, and they're all goat things).
Gerson in particular talks about Boss Monsters to us, and he explains it in explicit reference to Asgore.
The Sprite could also be called that generically because she's a old person, plenty of media has people call old people "gramps" even when they're not their/a grandpa
