Deep-fried brain is a delicious typical dish here between Liguria and Piedmont (Northern Italy). After removing the membrane and the blood, the brain is cut into pieces, then floured, dipped in egg wash and breaded, then fried for 3-5 minutes.

Homemade potato salad with a dressing of broth, oil and vinegar, and some added cucumber for freshness. Maultaschen were fried (because I don't like them boiled) and served with slow fried onions and some chives.

Maultaschen are often called German Ravioli. It's a pasta stuffed with (for example) meat and herbs, originating in the southern parts of the country

I usually stay away from viral recipes. But I like burgers and cheese, so had to give this one a try. Turned out quite good, only the plate was a bit too small 🤣

Served in a homemade bun and with homemade slaw and oven potatoes on the side.

Lunch Stuffed squash flowers from my own plant

I am so proud of my butternut squash plant, she's been growing like crazy since the rain hit. I'm talking 30cm vine more EACH DAY, she's gonna escape the garden any day now! Felt like a waste to leave the male flowers until they turn brow so I made a delicious snack from them for lunch.

Made it inspired by stuffed zuccini flowers, so I went with the classic ricotta, parmigiano regato and garlic filling.

Beef cooked sous vide 10h at 57C.

The base of the sauce is canned tuna, capers, and anchovies. One was then finished by adding mayonnaise, the other by mixing in hard-boiled egg yolks, olive oil, and vinegar.

Then decorated with caper berries.

The meat is served cold or at room temperature.

Eggplants cooked over open flame then left to drain, onions and gogoșari (peppers) through food mill, some homemade tomato juice and beans at the end. Portioned in jars (old mustard jar on the photo)and covered up until they cool down. Grandma knows best!

edit: the name is zacuscă, not zacusă
