Serving locations

My husband wants to take me to a restaurant or bar in Indiana or Illinois that serves Absinthe properly. Does anyone know off han

I'd say your chances of finding proper absinthe service in flyover states is near non-existent.

It's a trap.

Ina Mae in Chicago has an "absinthe menu." It offers Pernod and St. George, using a 2-oz. pour and 1:1 ratio, which seems madness. N.B.: They also appear to offer a sazerac and a corpse reviver w/"pasti" [sic]. The latter could be done with absinthe.

The Violet Hour, which offered at least a half-dozen decent absinthes, is définitivement fermé. 💀 I'm not aware of any of the graduates doing something new and absinthe-focused. As always, I could be wrong. But I doubt it!

Good luck in your search. If you do find something, please vet it thoroughly as far as offering a selection of good quality absinthes, and never putting a lighter anywhere near your drink.
