Eggs seasoned with white pepper not black pepper as I don't like black flecks in my eggs. No butter on the toast as the eggs were buttery enough.

I’ve been trying pancakes for a while and I tried a few recipes from the internet to come up with the best pancakes from scratch. I’ve used milk and buttermilk but the pancakes always come too hard. They’re not soft or fluffy.
This is the last recipe I tried.
2 cups (250 g) all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 ¼ cups (530 ml) buttermilk
2 large eggs
1 teaspoon vanilla extract
4 Tablespoons (57 g) unsalted butter, melted and cooled
