Really: it’s a piece of the casing they didn’t remove. Probably had a large end after being twisted and no one noticed.

Looks like it could be a heart valve or just part of an artery. I can’t quite tell if those are cusps and cords on it.

Looks like a piece of cartilage or connective tissue that didn’t break down properly. Definitely not something I’d want to chew on unexpectedly.

Please don’t eat these. They are made from the worst scraps and filled with poison.
Think to yourself for a minute; why would anyone choose to dry out meat whose flavor comers from being tender and well marbled with fat? Most likely because it is unsalable in any other form.
This goes for wagyu hamburger too. It’s barely one step up from the jerky.
