General Discussion Peach salsa, first batch completed

Just completed my first batch of Peach Salsa (Ball recipe) since 2023. I’m on a new kitchen I share with my roommate so adjusting to workflow changes, smaller space, etc.

Feel quite proud of this first batch although the yield was not quite the 6 jars listed. But I was a little too precious in measuring and making sure I hit the exact amounts. Measured headspace 4 times on each jar to make sure I was accurate. But now muscle memory has kicked in again, thanks fully.

I have almost 1/2 bushel of peaches left so at least two more batches coming. I gift these and each myself throughout the year so 2-3 cases of pints is normal.

Thanks to everyone who answered my earlier questions and provided the Peach-Habanero recipe, Ball’s newest, for my use.
