Spent hours
Today I spent hours cutting up vegetables for our new favorite dish, roasted mixed vegetables. I tried this once before with enthusiastic response from my husband, and he’s been looking forward to the repeat.
I cut up zucchini, yellow squash, and eggplant, salted them down and let them sweat while I went on to cut up peppers, cauliflower, red onion, Brussels sprouts, and mushrooms. I spread the second mixture on a sheet pan and tipped the zucchini, squash, and eggplant in another. Everything was drizzled with olive oil and lemon juice and dotted with parsley and chopped garlic. Dressed them both with salt and pepper and slid them into a 425 degree oven to roast for almost an hour since the pans were a bit crowded. I like to make a lot so we have leftovers. Added some chicken thighs to roast along side.
It all smelled amazing as it cooked. It looked beautiful when it came out. It tasted marvelous too. The Brussels sprouts were a little sweet and the cauliflower…so good. It was all amazing. Even the eggplant which I’ve never been too fond of before. I’m a convert.
So I call my husband out to eat. He grabs a bowl and fills it up with veggies. Then he reaches in the refrigerator for a bottle of Thousand Island dressing and proceeds to douse those beautifully caramelized morsels of vegetable goodness with it.
Sigh. He used to put ketchup on so many things and I thought those days were over. Apparently not.

My husband would not eat any of those wonderful vegetables even with catsup. Sigh.

I can totally imagine your dismay! Ultimately, I don't think I'd be TOO bothered by it, but jeez, at least try a bite first?
I used to think I didn't like eggplant, too. Love the stuff when it's cooked properly.

Listen I know I shouldn’t be bothered by what other people do with their food. It’s none of my business and I probably also do weird food things.
But I can’t help myself…..it bugs the hell out of me when people do what I would consider “ruining” food. 🤣

That’s a shame because they sound amazing.
BUT. He’s doing that because he knows you like them and wants you to eat them and that you might not make them if he didn’t eat them. I think it’s sweet.

Oh he loves the roast vegetables and wasn’t just eating them for me. He just wanted to try something different with them, and it just seemed kind of yuck to me but he liked it so 🤷🏻♀️

This all sounds delicious and amazing!! I will add that my brother-in-law makes this on the regular to bring to family gatherings and we all love it. One additional tip: Several slices of lemon tucked between veggies, and a good squeeze of another over the top of it all before popping in the oven. Adds a delicious brightness to all of it! As for hubby, I’m sorry he couldn’t just appreciate the dish as it was, and hope he tries it FIRST next time!!

I'm still trying to figure out how on earth someone could spend hours cutting up veggies for roasting and only fill one oven.

Ultimately, yes, he enjoyed it and said he liked it with the dressing on. But I would have liked him to try it without first.
Don’t worry though. We’ve weathered worse in the 43 years we have been married. He’s got a more sensitive ear than I do, but I’ve always had the more sensitive palate. He does love my cooking and that’s what matters.

She could have spent a significantly shorter time making them. No need to spice and check for how it tastes. I spent a lot of time making eggs for my partner for them to just dump ketchup on them. It made my life a lot after that, I just fried up eggs sans any seasoning for them.

How much was bail?
I solved this by making him cook WITH me. When he realized what went into it, he was a lot less likely to cover it in boughten bullshit.
That, and his veg for the rest of the week woulda been frozen succotash.

My partner has respected the “at least try it first!” rule for adding sauces that aren’t designated parts of a meal. Yours can too.
