Madhur Jaffrey is amazing! When I was in law school I was able to make amazing Indian meals for all my friends, thanks solely to Madhur the queen! I haven't thought of her in so long, but her recipes are so accessible but also so delicious.

you know the grease and the fond that you get when you pan fry chicken? I make myself shake and bake chicken thighs and cook up a batch of rice.
then I file the chicken in the fridge for some healthier day, and just kind of use the cooked rice to clean up the pan.

Mine is similar. I loved crisp chicken skin so I get a tray of thighs, bake until the skin is rendered and hard, then pull the skin off, put the naked thighs in the fridge. Then I mash a baked potato into the drippings, scoop the greasy taters into the skins and dine.

My wife is Swedish and even though she is starting to come around a little bit, she has a very low tolerance for spicy food (as much as she wants to like it). I grew up eating spicy foods but her tolerance when we started dating was basically chipotle mayo sauce had a "kick" to it for her. I put two shakes of cayenne on our salmon once and you would have thought I marinated it in ghost pepper for 24 hours haha.
So when she is gone, I will make something with Cajun seasoning or order hot wings from a local place and I get my fix of spicy stuff.

I usually make some form of Asian food, especially Thai curries. My kids will not eat these, and they're some of my favorite things.
Rarely, I'll make a childhood favorite: spaghetti with butter and bagged fine grated cheese. Has to be the pre-grated bagged stuff, like Kraft triple cheddar or colby-jack. It's not cheese sauce, it's pasta covered with shredded cheese. Like a baked potato. Ideally you add the cheese a little at a time and eat it so fast it doesn't have time to melt.

There's usually a box of Kraft Dinner, eaten straight from the pot, with a can of Coke 0. And for longer trips, one night at the Pizza Hut buffet.
I tend to prep a mix of appetizer type stuff; cheese, olives, pickled vegetables, some hummus and tatziki, meatballs, chicken skewers, a few hearty salads, pita bread, veggies and dip, a pureed soup, and graze on that for a few days.
My spouse makes a giant pot of Japanese curry, another of cream stew and some rice, and happily lives on that.

Mushrooms, usually stuffed!!! fucking love them, but she is allergic. She doesn't mind if I order them or eat them while she is around, as long as I brush my teeth before we kiss, however, I just dont like to risk having them around im the house like i used to. My partner (soon to be spouse!!!) will NOT eat a handful of things that are guilty pleasures of mine so I always load up when she’s gone on her week long work trips
These include steak with mashed potatoes, steak over an entire bag of salad (has been shelved due to the Scary Lettuce here in the US), hot dogs, literally anything buffalo or ranch based, and just like sooooooo many olives or pickles straight out the jar alongside some shitty off-brand Kraft singles (I would never subject her to that last one. That’s solely a Me Dinner.)

We're mostly vegetarian and fish but when I'm home alone I fire up the grill cook up a steak (rubbed with salt, pepper, and old bay, and cooked just shy of medium rare), and eat it alongside that shitty pasta salad from every grocery store in the Midwest. Just me, my meat, and a white creamy mess.

Desserts involving lots of cream or butter, like baklava or a sans rival.
Kitfo at a Ethiopan restaurant - this is raw chopped beef in spiced butter, served slightly warm with mitmita (hot pepper spice) and farmers cheese. I have just one friend who will also eat it but they live in another state.

Sushi, schlotzsky’s (austin Tx based food chain) original sandwich, big bowl of chopped spinach steamed (wife hates frozen spinach), Salisbury steaks. The salisbury steaks one is a big one because these are the cheap frozen dinner ones. I don’t want to shame anyones dinner, but because my wife has known me to cook stuff from scratch, making frozen salisbury steaks would be me phoning it in. And since they aren’t popular in the house, I would never serve those for dinner for the family because they don’t like them and they aren’t exactly that good for you and there are more popular frozen to oven dinners that they do enjoy like pot pies. Tons of salt, low quality meat, preservatives like crazy. But there is an occasional school lunch craving I get of these things so if Im home alone I might buy a family package of them and eat off them for the weekend. Funny enough my wife will eat instant mashed potatoes for the same reason when Im not home. I make homemade mashed over instant, but sometimes she just wants her school lunch mashed potatoes

Ill hit the store and grab a steak or carne asada or a pork chop and ill make 1 or 2 sides depending on how high I get once they leave. Ill pick up early or the day before so I can marinate/throw on a rub then grill everything (usually try to do roasted veg but sometimes the kids dont enjoy) I love doing at least 1lb of asparagus with olive oil salt and pepper and devouring the whole pile along with the meat

I make my parents’ bastard version of beef stroganoff. Starts with cooking some ground beef and onion, then adding a can of cream of mushroom, and a can of cream of chicken. Add sour cream, salt, and pepper to taste, and serve on a bed of white rice. It’s more nostalgic than it is tasty, but I love it just the same

Fairly certain my wife does the same thing if she has a weekend alone, except for the cooking, because she hates cooking. She'll just eat bagels with cheese on them and sour candy all weekend.

Used to be that I would order something nice. Now I cook, so when they go away for a night or a weekend, that's my chance to clean the kitchen. I can remove everything from the freezer and reorganize it, scrub down the back of the fridge, all the stuff I don't feel like doing with the wife and kids around. And I can celebrate by cooking something that stinks up the house!

Poach shrimp and cut up in bite size pieces. Halve cherry tomatoes. Melt a tablespoon of butter and lightly saute one clove of minced garlic, toss pasta, shrimp and tomatoes in the butter. Coarse ground black pepper on top. Some grated parm or some feta if you want to be "extra".

Snack plate with salami, cheese, crackers. If I’m alone, I will prioritize no dishes.
As for shameful treats, raw cookie dough. If my family is around, they will expect cookies, but I just wanna eat the dough.
