Content on youtube?

When can we expect the videos to be uploaded on the official channel?

In a few months. Everyone is still recovering, and there is a ton of footage to edit and post.

some of the villages will have their footage up quicker, for instance, the Voting Village already has their videos up.

just search for the individual Villages’ own youtube channel and see if their videos are live

It'll be a couple of months. Source of Knowledge, the company that films all the talks for DEF CON, gets about two months of exclusivity so they can sell the videos to companies that pay hundreds of dollars for them. Once that lock up expires, they go up on media.defcon.org and DEF CON starts uploading them all to Youtube.

The goons actually already received the videos a couple days ago

Not that I'm aware of, I just downloaded a file from it without issue.

Check the villages. I gave four talks in the Ham Radio Village, and all four of them are already on YouTube. Their YouTube page is at: https://www.youtube.com/@HamRadioVillage/videos They have 12 videos online now all from DC34.

I'm not 100% sure, but it's likely that other villages have their videos on YouTube as well. They pretty much all have discords, which is the best way to interact with them if you want to ask.
