Question How do you make Carbonara cream?

Carbonara: ricetta e preparazione

400 g pasta (spaghetti, mezze maniche, bucatini) 🍝

280 g guanciale 🥓** **

200 g pecorino romano 🧀** **

5 tuorli (media grandezza) 🥚

q.b.pepe nero in grani

Procedimento:

•Sbatti i tuorli d'uovo con il pecorino romano grattugiato e abbondante pepe nero fino a ottenere una pasta densa.
•Versa un mestolino di acqua di cottura della pasta (o un po' di grasso caldo del guanciale) e frusta energicamente per sciogliere il composto in una crema vellutata e omogenea.
•Rosola il guanciale in padella finché è croccante
•cuoci la pasta al dente in acqua poco salata.
•Scolala nella padella a fuoco spento
•unisci il composto di tuorli e pecorino con un goccio d'acqua di cottura e manteca energicamente fino a creare una crema fluida.

P.S: usare uova fresche e per la vera carbonara di deve usare il guanciale!

Question First Time Making Aglio e Olio

Question Tortellini barilla fanno puzzare l'alito

Ogni volta che mangio il mio piatto preferito in assoluto: i tortellini secchi Barilla (Emiliane) al prosciutto crudo il mio ragazzo si lamenta dicendo che mi puzza l'alito di qualcosa di molto pungente, simile all'aglio o alla cipolla. La cosa assurda è che se guardo la lista degli ingredienti sulla scatola, aglio e cipolla non ci sono proprio! C'è solo carne stufata, prosciutto, parmigiano e aromi/spezie.

Ho provato a lavarmi i denti subito dopo, ma lui dice che l'odore si sente lo stesso, come se venisse direttamente dallo stomaco o se i residui del ripieno si incollassero alla lingua. Con altri tipi di pasta o formati freschi non mi succede. E io stessa non noto l'odore.

Capita anche a qualcuno di voi dopo aver mangiato questa marca specifica? O sono io che ho una digestione strana con questo ripieno?

Il mio 🎓 in cucina :. VENTRESCA DI TONNO SOTT’OLIO LARDELLATA - EMULSIONE DI RICCIO DI MARE

Ingredienti

👉Ventresca di Tonno sott’olio
👉Bottarga di Tonno
👉Polpa di Ricci
👉Alici sott’olio
👉Olio di semi di Girasole
👉OlioEVO
👉Pangrattato
👉Finocchietto selvatico
👉Lardo di Nero dell’Etna
👉Pepe di Sichuan

Procedimento:

🫰In una Padella fate tostare i grani di pepe di Sichuan
🫰Rimuovete i grani e scottate i bocconi di tonno precedentemente avvolti nel lardo fino a formare una crosticina - Tenere da parte il grasso…
🫰In un padellino Abbrustolite il Pan Grattato con 2 filetti di alici ed il finocchietto selvatico
🫰Create la salsa emulsionando la polpa di ricci, la bottarga di tonno grattugiata ed il pan grattato con il mix di olio di semi e l’olioEvo delle conserve di alici e ventresca sott’olio
🫰Mettete su l’acqua per la pasta aromatizzata con pepe di sichuan. A bollore salate l’acqua e buttate la pasta
🫰Ultimate la cottura in padella risottandola con la sua acqua
🫰Fuori dal fuoco aggiungete la salsa “carbo-mare”

Impiattate facendo un nido di pasta e guarnendo con il tonno lardellato qualche uova di riccio di mare
ed un rametto di finocchietto selvatico.

SEAFOOD CARBONARA

Ingredients 🇬🇧
👉 Tuna Ventresca (Belly) in oil
👉 Tuna Bottarga (Cured Roe)
👉 Sea Urchin Pulp
👉 Anchovies in oil
👉 Sunflower oil
👉 EV****O oli
👉 Breadcrumbs
👉 Wild Fennel
👉 Nero dell’Etna Lardo (Cured Pork Fatback)
👉 Sichuan Peppercorns

Procedure :
🫰 Toast the Sichuan peppercorns in a pan.
🫰 Remove the peppercorns and** sear the tuna bites (previously wrapped in lardo) until a crispy crust forms. Save the rendered fat for later.
🫰 In a small pan, toast the breadcrumbs with 2 anchovy fillets and the wild fennel.
🫰 Create the sauce by emulsifying the sea urchin pulp, grated tuna bottarga, and breadcrumbs with a blend of sunflower oil and the EVOO from the anchovy and tuna tins.
🫰 Bring water to a boil for the pasta, infusing it with Sichuan pepper. **Salt the water once boiling and drop the pasta.
🫰 Finish cooking the pasta in the pan, tossing it (risottando) with its cooking water.
🫰 Off the heat, add the "carbo-mare" sauce.

Plating:
Create a pasta nest and garnish with the lard-wrapped tuna, a few sea urchin tongues, and a sprig of wild fennel. less

Homemade Pitina (traditional from Friuli-Venezia Giulia region in Italy)

This July 5th I prepared 4 pitine (a typical salame from the Friuli Venezia Giulia region).

I chopped 1 kg of meat by hand (I'll never do it again, it was a lot of work; I recommend asking your butcher to mince it for you), using 30% pancetta, 70% loin, it was all pork (but traditionally, leftover game cuts were used, so you can do it however you like).

27g salt, 7g pepper, 100g red wine, 10g smoked paprika.

The preparation is very simple: you mix everything in a container until the meat mixture sticks well, then you form meatballs of approximately the same size, roll them in polenta (this type of cured meat does not require casing, or rather, the polenta replaces the casing), finally they are smoked (I used a drinks smoker for about 1 hour).

At this point, simply turn them every day while they age (I aged everything in my refrigerator at 4°C, not ideal, but by some miracle, it worked well). In my case, since I didn't have the ideal humidity, I kept them in glass containers with lids. When I turned them everyday, I left them uncovered for a couple of hours (still in the refrigerator) to let them breathe and avoid excessive humidity.

Luckily, since I was making a Toma-type cheese with white mold, the mold also spread to my pitinas, making them even better.

Today, after they had lost 30% of their weight, I opened them and tasted them: they taste and smell soo goood!!!

PS. I know that for food safety reasons it would have been better to use nitrates expecially since this is not a whole muscle but, at my own risk, I did not use them.

I still used enough salt and I still washed the meat in alcohol and I also smoked it, but I know this is not a 100% sure thing, you do you of course.

I only put them on parchment paper because I sterilize them for 30 seconds at 250°C. I dried them whole in the sun all summer.

In addition to concentrating the natural sweetness of the figs and grapes, unlike baking at really low temperature (50°C), this also creates some aromas from alcoholic fermentation, making the result less sweet and more interesting.

Homemade Gnocchi sweet potatoes

Let me start by saying that they're not traditional, the reality is that modern potato gnocchi (which are delicious, mind you) aren't really the only gnocchi made in Italy. Gnocchi, historically speaking, were actually once more a method of preparing a dish the a precise dish with precise ingredients.

So using sweet potatoes seemed like a good idea, and it wasn't too difficult.

I used a method suggested by chef Barbato (I cannot post his video here so you will need to look up yourself "GNOCCHI DI PATATE PERFETTI: Il Segreto Professionale per non farli mai gommosi") the main point of this method is evaporate part of the water from the dough before making the gnocchi to make the gnocchi more stable.

Fresh gnocchi are in fact usually easy to make and to cook... but some potatoes got more water so if you try to freeze them by the time they are frozen they will be soaked and once you try to cook them they will dissolve in boiling water. Sweet potatoes are even worse and even fresh are difficult without the precooking of the dough method.

My "sauce" was really simple: extravirgin olive oil and dry tomato powder (I made it myself by letting some tomatoes go really dry in this hot summer sun) and, of course, salt and pepper and parmigiano.

The result was really good. Next time I will make them again with regular potatoes (to be honest I don't like sweet potatoes, but I didn't know until I tried them this week, but I did not want to waste them)

Homemade Tagliatelle panna e funghi 🍄‍🟫 🍁

INGREDIENTI :
• Per ogni persona 100g farina 00 e 1 uovo 🥚 🌾
• Porcini freschi 🍄‍🟫
• Aglio 🧄
• Prezzemolo 🌿
• Vino bianco
• Sale & Pepe

PROCEDIMENTO:
—-> per la pasta:
Impasta 100g di farina con 1 uovo a testa finché l'impasto è liscio, poi lascialo riposare 30 minuti avvolto nella pellicola.
Stendilo sottile con il mattarello (o la macchina) e taglialo nella forma che preferisci (io ho scelto le tagliatelle)

—->per il sugo:
Pulire i funghi tagliarli in pezzi non troppi piccoli,
Prendere una padella mettere un giro di olio e aglio precedentemente pulito,far soffriggere quando bello dorato togliere l’aglio e aggiungere i funghi lasciar cuocere.
Sfumare con vino bianco e completare la cottura.
Solo alla fine aggiungere la panna

—-> Scolare la pasta, condirla e servirla con una spolverata di prezzemolo e una grattata di pepe..
