Why would I invest my money in a company, taking a risk, if I could just stuff it under a mattress for it to gain value?

because you believe in that company to be even more valuable than money under the mattrass.

If you don't believe in that company, don't invest. Good companies will find investors anyway, and bad companies will no longer get life support on your fear of inflation.

How do you think companies found investors before 1913?

LOL no. It was wildly prone to boom and bust cycles, and a far higher proportion of people lived in poverty.
