Recommendations Series with great plot twists?
Yeah as the title says, I haven't read a ton of seinen so the field is quite open of recommendations

Dorohedoro for sure! It is a series that keeps you on your toes and you never really know what will happen next. I don't want to say anything more, it is definitely a series that is best to go in blind.
Land of the Lustrous also really had me shocked at some of the major reveals throughout the story. Phos becomes unrecognizable as the series progresses, and the main "enemies" aren't what they seem to be. Basically, if anyone asks me what the plot of LotL is, I tell them to look up The Ship of Theseus.
And, although less of a huge plot twist, I would definitely say that Dungeon Meshi does a great job at subverting expectations. The beginning of the story appears to be a bit more episodic and linear with a clear goal... but, once that goal is "achieved" early and a new much larger and complex issue arises, it becomes something much more grand than the initial premise implies.
Dorohedoro, Land of the Lustrous, and Dungeon Meshi are complete too with satisfying endings so you wouldn't be strung along waiting between chapters and hoping they don't go on hiatus.

Damn lol usually it’s one of the lesser known picks. Have you read Choujin X yet? Also great plot twists and incredible story/art as you’d expect with Ishida

Oh I've been thinking of starting that one because I loved tokyo ghoul

Highly recommend. TG is my 2nd fav OAT and CX doesn’t disappoint at all. The beginning might feel a little slow but it picks up quick, and once it does it doesn’t slow down

Honestly surprised to ever see this mentioned. Hidden gem of an anime although the 2nd half was a little lacking.

The manga story is a bit, including the twist. It!s worth it IMO.

I think it is personal preference. I prefer the manga so I would recommend Manga first. I like the story and twist better than the version of the movie.

BLAME! Has some interesting twists but you might not even catch them on your first read lol. Its kind of difficult to parse.
Fire Punch has some cool twists. Its not seinen by definition but by story content it might as well be.

I couldn't get into blame ngl, maybe some other time. Fire punch was pretty decent, though a lot of the "quirkiness" I felt wasn't necessary
