As the topic says, if Glossaryck knows everything that has happened, and will happen, why did anything matter? Why give the Butterflys 'infinite power' that led to conflict on Mewni and beyond for centuries? Did Star 'destroying the magic' matter? Does this mean, therefore, that Glossaryck transcends magic, even reality?

What was the greater plot going on here?
Glossaryck's all-knowing omniscience is a theme throughout the show. In By the Book, he 'explained' being in the right place at the right time and stopping Ludo as:
I had to be in that donut box so I could land at Ludo's feet to trip him up and save the day.
He then played it off and Star and Marco gave up trying to understand it.
It feels like something bigger is here. It's not just Monsters and Mewmans, Magic and the Multiverse. Something bigger is pulling the strings of existence itself. Maybe we've just scratched the surface of the conflict in this story.
