Personally, I liked Crappy Bronzing guide to grasp the principles - https://aoe.heavengames.com/theacademy/multiplayerstrategies/crappy-bronzing-revisited/

It's now about 28 years old so some of the numbers might change, but the idea and aim of playing the game to gain an edge is pretty well illustrated.

As for civs, Assyrians or Hittites tend to be easily approachable with good bonuses.
