Satay tofu with carrot and broccoli
My favourite budget mid-week quick cook. All pantry staples, only need to buy tofu, broccoli and carrot ($4.90 not considering pantry staples today!)
1 block firm tofu
1 large carrot
1 head broccoli
2 tbsp soy sauce
2 tbsp roasted crunchy peanut butter
1 tbsp rice wine vinegar
1 tbsp maple syrup
1 tsp minced garlic
1 tsp minced ginger
1 tsp chilli crisp
Salt and pepper
Oil of choice
1 cup rice
Chop tofu into thin triangles and shallow fry. Set aside once golden brown.
Make sauce by combining peanut butter, soy sauce, rice wine vinegar, maple syrup and chilli crisp.
Add garlic and ginger to pan, fry for 30 seconds then add carrot and broccoli. Fry for 3-5 mins over medium before adding sauce. Add water to thin out sauce. Cook for around 8-10 mins or until sauce thickens back up.
Serve with rice.
I added chopped nuts, fried shallots, chilli crisp and sesame seeds, though these are just things I have on hand, absolutely not needed!
