Two pieces of French brioche: cottage cheese with red apple and cinnamon and Dutch old cheese with cucumber.
It goes well with a strong espresso.

I usually prefer a savory breakfast, but this was good. Also a good way to use some ripe bananas.

I’ve never been an eggs-for-breakfast person. I usually want something sweet, but still filling and balanced.
I soak 2 tbsp chia seeds in milk overnight.
In the morning, I add them to apple Greek yogurt, then top it with caramelized apples made with honey, cinnamon and a little butter.
Finish with granola and toasted coconut flakes.
You can switch up the fruit too, peaches, bananas, berries, whatever you like.
It’s sweet, filling, and provides protein, fiber and fat.
