Just give it 2 more days.. then we get the yeast or mold post.. if i was a moderator here id be making a sticky to leave out kimchi max overnight and that just be the fucking rule already..

Lovely jobly! I used to do the same and pack my containers. Now i fill them about 2/3 to avoid any leakage and loss of product. You might need a 3rd container though

Yea it’s true! Usually I keep a bit of space but now my fridge is so stuffed that I really pushed it to the limit 😂 I’ll use this flowing juice for my fried rice and then pop everything in the fridge

kimchi should be at room temperature for 12-24 hours and then go into the fridge for slow fermentation.

I read it was variable on room temperature. If it's hot, it only needs a day or two but during winter it's mostly a week

It is generally 12-24 hours in warmer weather and 24-36 hours in colder months. Kimchi is meant to ferment slowly in the fridge. It should not be at room temperature for extended periods.

however you do it, get some those kimchi ferment boxes. i used to diy my kimchi boxes but those things are super convienent

I agree, but they cost like 50 euros for a container :( maybe I’ll buy them in Korea when I visit next time
