Help Macaron characters

Any one have any tips on doing macaron characters?? It seems as though the videos I’ve watched they are almost piped like sugar cookies. I’ve seen conflicting things where it says to under macronage but The batter seems like it needs to almost be over macronaged to get through the little tiny hole so I’m conflicted! Would love any tips!

Examples below: NOT MY WORK- just a huge fan of this baker! She’s so inspiring!

The only time I under macronage is when I’m trying to get multiple colors split from one batch. Otherwise I mix as usual. For all the small details, I used to make everything out of macaron batter. Now I find it much easier to do all the details in icing.

Ahh gotcha! I really don’t like the taste of royal icing so I try to avoid it! Thank you for that tip!

No problem! Also, with my regular macarons I don’t have to rest them. But when I am doing characters, each segment has to dry before adding the next. I hope that makes sense.

That absolutely helps! Don’t add any egg white powder?

Currently I add cream of tarter but see some people recommend egg white powder (like pies and tacos)

For the characters I’m doing Swiss method currently. But when I do my regular shells I usually do French. I’ve heard the Swiss has a smoother look so that’s why I’m trying that route

I use the French method for everything and never use egg white powder.

I’ve gotten the chance to enjoy them! Personally obsessed with her Thai Milk Tea flavor. She seems super nice so maybe reach out on insta and ask her for any pointers?

Her flavors are amazing looking and her work is seriously out of this world
