The eye doesn't really add or subtract from the first boss (just looks goofy and is an unnecessary change) but it kinda ruins the Goht fight. The fun of that fight is the constant rolling and not needing to stop, the eye breaks that flow and ruins the fun (also its goofy)

I love n64 Odolwa so much, and the way the fight was so nerfed in the remake is genuinely upsetting: from giving him a big old gut, to making him just stand there without putting up a fight, to forcing players to use the Deku flowers instead of being able to approach it however they’d like, which was so refreshing, especially for a first boss. Worst of all is how he now falls on all fours when hit like a clumsy oaf instead of a proud warrior. All the bosses were already cohesive with the mask motif, they did not need those giant fuck-me eyeballs and none of the changes make the fights more compelling. I feel like none of the creators fundamentally understand why MM is so poignant and moving; they treat it like the red-headed stepchild of the series, and the ridiculous changes that make playing feel so much worse in the remake only affirm this.

As per my comment above, you can actually approach it in many ways still, there is a reason why grass around the arena gives arrows, and why they kept the bomb flowers.

For the first two bosses, it doesn’t add much. However the fish and worm bosses now have more phases and are more difficult and satisfying to beat. Giant Link gets to pummel one of the worms with his fists, which differentiates him from regular Link. And you get to swing the worm around Super Mario 64 style for finishing moves.

I'm ok with the Twinmold change in theory but when I played Majora's Mask 3Ds that fight took ages - he just wouldn't go down. I looked it up immediately after and it wasn't isolated to me, either.

Yeah, it diving into the sand resets the punching damage to stun him, which unquestionably asinine. That aside, it was generally more satisfying.

Agreed. I like the two-phase structure, but no game, especially not Majora’s Mask, should have bosses that are built to waste your time.

IMO it completely broke Odolwa boss, he can be beaten so easily I've never taken a hit from him in the 3DS version Deku flower>Deku nut>slash. He doesn't do ANYTHING BUT STARE AT YOU WHEN YOU FLY TOWARDS HIM

You’re both using that word very differently.
You’re talking about how potentially easy it can be, which is true you could beat N64 Odolwa in seconds when you know what you’re doing. Yet still is a bit of challenge for first time players (not too much, it is the introductory boss but Gohma is still easier).
They’re talking about how easy that fight is for a new player. The instructed path the game lays out for you, and the battle AI for 3DS Odolwa itself, leave little room for challenge no matter how new or seasoned the player is.

On the one hand, making the different mask forms matter more during the fights? Fine for the most part, but the quality goes down as you progress to each boss. By Twinmold, it's a soggy mess where you have to master a new form during a boss fight (before, it was just a size change, you kept your sword skills)
On The Other Hand, concerning the unifying motif of the Parasite Eye, eh, it's so-so. This motif is mostly a thing from the newer games, that got added to MM after the fact. It does fit with Majora's own look, but there's no added lore for who exactly the 4 bosses are. Closest we get is seeing their masks represented in the Carnival of Time story. Are they the 4 Giants, corrupted by the Parasite? Are the Bosses the parasites, preventing the Giants from manifesting? Just a little extra local lore would have been nice.

Unironically yes.
The eyes give Majora a parasitic quality which makes it all the more creepy to know it's the Giants sealed in the boss masks.

Hot take: No, it's not about the eye itself, I too prefer the bosses without it, but I do dislike the misconception that bosses now only have a single way to be beaten, yes, technically the eye is the only weak-spot they have, but getting that opening is still freeform, as much as the fight allows.
The outliers are Gyorg and Twinmold, the latter being the most strict, but Gyorg has a super interesting way to fight it without using the Zora mask.
