I just wanted a hot dog Mom bought 150 lemons.

Juice them, then freeze the juice into cubes with a silicone mold. Fresh lemon juice year round!

6 lemons, 5 cups water, 1.25 cups sugar.

Use vegetable peeler to peel zest off lemons. Put in bowl, mix with sugar, let sit overnight. Sugar will pull out lemon oils.

Heat water, mix with sugar / peel mix and strain out peels. Let cool.

Juice lemons and add to sugar water. Cool. Serve over ice.

Best lemonade of all time.

Edited boil water to heat water. I usually boil in kettle and let sit for a bit. Idea is that hot water dissolves more sugar faster. It also seems to not precipitate out or get grainy later.

Well it is lemonade. It's a treat not a staple.

Also it's very strong. Go 50/50 with ice an at its super tart and sweet when you start sipping, mellows out through the middle of the glass, and ends with lemony water - leaving you feeling hydrated.

The water doesn't have to be boiling, just hot. You're just getting all the sugar dissolved and extracting any remaining flavor from the peels. Too much heat will dull the flavor, even.

When I make state fair lemonade, I like to make a 1:1 simple syrup with the zest infused sugar, add the lemon juice, and then just keep that around to make lemonade from by adding in another 3-4 parts of water for every part syrup used. In OP's case, it'd be a way to process all the lemons at once and only have to worry about storing ~25% of the total volume compared to fully ready to drink lemonade.

I usually just pop it in the fridge because I know I'll use it up soon enough, but then, I'm also not using 150 lemons.

Lemon juice has a lot of uses as an acid if you have it available also, or to make dressings. If the cubes were small enough you could even make lemonade by the glass.

Then when the weather gets cold enough for soup, look up recipes for the Greek dish “soupa avgolemono” and make it! This is my favorite food but I don’t make it often because squeezing all the lemons is a pain 😂 (yes I could just buy a juicer but I hate having kitchen gadgets that only serve one purpose lol)
