Question

2 tablespoons Papaya (Diced)

2 tablespoons Rocca (Chopped & packed)

2 tablespoons Boiled Chicken Breast (Plain, shredded)

1/2 teaspoon Pure Honey

1/4 teaspoon Bee Pollen Granules

1 regular pinch of plain Calcium Powder (Without D3)

Once every week add 2 drops of PediaVit MULTI

How long could this theoretically last before any problems emerge?

It will last until it doesn't. Deficiencies can accumulate quickly with signs and symptoms not showing themselves until it's too late, or late enough to require a vet.

Here is how to calculate calcium: phosphorus ratios, gliders need a 2:1 ratio daily.
