Week 35: Rolling - Taco Swirl Bread (meta: pantry staples)
Sometimes, I get really fixated on a dumb concept. This week, that concept was "what if cinnamon rolls but with refried beans?". I then made cinnamon roll dough and refried beans. The bean filling was not cooperative: it would ooze out whenever I tried to cut the roll into swirls, so I eventually manhandled the whole thing into a pan, baked it, topped it with cheese, and baked it some more. The result is better than it has any right to be, but it's not especially taco-like due to the fact that it's wrapped in a yeasted bread. I think I could make an argument for it being high-fiber, though.

Week 35: Rolling - Eggplant Rollatini
Finished off the last of this year's eggplant harvest tonight. This was probably my favorite thing we made with eggplant this season. The eggplant was stuffed with a ricotta cheese mixture and pesto.

Week 35: Rolling – Viral döner kebab
A pretty clever (and TikTok-famous) way to make döner kebab in a home oven: by rolling up thin layers of spiced ground meat in parchment paper, then roasting the rolls alongside tomatoes and onions, and ending by breaking the meat into slices and broiling them!
