Seized brakes, weird revving pattern and more!

So my mom's 2007 nissan versa started overheating due to a broken radiator leaking coolant. The car was driven and would overheat and either go into limp mode or stop. I changed the radiator and flushed the coolant. Now the brakes are seized, and the car would rev by itself and go back when idling. I did the glove test to test the head gasket, and I don't think it's the head gasket since the glove didn't inflate. However, smoke comes out of the oil fill and the coolant bubbles in the reservoir. Also, when I press on the brake pedal, which is super spongy, the rpms would increase.

Please help me diagnose the issue with this car.

If the customer approves the repair but the old part is still good, is it okay to just leave it on?

Customer already approved and paid for the repair, but once I got in there I realized the old parts are actually still pretty good.

Seems irresponsible to remove perfectly good OEM parts and risk breaking something just to install brand-new aftermarket parts that are probably lower quality anyway.

My thinking is leave the good old parts installed, put the new parts on a shelf in case they ever actually need them, and still mark the repair completed because I prevented unnecessary wear and future damage. I call it preventative non-maintenance.

Am I finally understanding flat rate?
