Correct me! 27일
우리 도시에 있는 쇼핑센터는 많아요. 오늘이 집에서 가장 가까운 쇼핑센터에 갔어요.
ㅇㅇㅇ라는 편의점이 2년 지 거기에 도착했어요. 이 상점에 한국 간식들이 살 수 있어요. 좀 비싸도 너무 맛있어요. 라면, 치즈케이크, 페페로, 옥수수 아이스크림, 복숭아 주스, 바나나 우유, 과자 등 먹어본 적이 있어요. 멕시코 간식들과 다른데 잘 먹었어요. 전에 이런 것들이 볼 수 없지만 한류 때문에 멕시코 사람들이 한국 음식과 간식들에 관심이 많아요.

The original sentence would mean "The shopping centers in my city has lots of (unspecified) things".
오늘이 집에서 가장 가까운 쇼핑센터에 갔어요 -> 오늘은 집에서 가장 가까운 쇼핑센터에 갔어요
The use of ~이/가 would make the sentence mean that a personified entity of "today" went to the shopping center, not you.
I'm noticing that you're using ~이/가 in places where ~은/는 or ~을/를 is appropriate in other parts of the write-up (and vice versa), causing similar issues. Your formulation of the sentences are more or less fine otherwise, so you might want to take note of this.
편의점이 2년 지 거기에 도착했어요 -> 편의점이 2년 전 거기에 입점했어요
When a store "comes into" a larger premise, the word to use is 입점, where the origins of the word are 입 = enter / 점 = store.
이 상점에 한국 간식들이 살 수 있어요 -> 이 상점에서 한국 간식들을 살 수 있어요
페페로 -> 빼빼로 (the actual Korean name, even though the English name is spelled Pepero)
과자 등 먹어본 적이 있어요 -> 과자 등을 먹어본 적이 있어요
전에 이런 것들이 볼 수 없지만 -> 전에는 이런 것들을 볼 수 없었지만
