Etiquette is kind of hilarious. People don't realize culturally it's fine to pick up Sushi with your hands. While it's 'rude' to take more than 2 bites of the sushi or to mix your wasabi and soy sauce together and turn it into a dip.

With that said I can't imagine many who work in a sushi restaurant actually care about that stuff.

Wait. Mixing the wasabi into the soy sauce is considered rude?? I was always taught that was the proper way to do it.

Soy sauce is not traditionally a dipping sauce, it’s a cooking ingredient. It only gets used like that in western places, I suspect because we used to overcook rice (dry) and love salt.

Nigirizushi absolutely uses shoyu as a dip. Though one should be mindful to pnly pour enough for what they're eating and only the fish should touch it.
