Its not impossible to farm, its difficult to farm, based on what I can find, 2 year harvest cycle, requires consistent cool temps and flowing water, not at all outside the scopes of what modern farming can handle.
My fault for not being specific, I meant it is not farmed on a large scale. The combined cost and effort mean true wasabi is not mass produced, not enough to be a regular staple at most restaurants in Japan. Most restaurants in Japan use the same stuff we get overseas.

Innit mainly horse radish in Japan too? Real wasabi cannot be farmed so it’s scarce even there.
