HELP 😭

i’ve been using the same cookie dough recipe for a while and it’s never given me issues, but the past two times this has happened. i use a perforated silicone baking mat and the cookies are hard to take off, and as you can see chunks of the cookies got ripped off 😭 also when i left up my mat, it looks way more greasy/buttery than usual

This has happened to me before too. Here's two things that might help.

I deep clean my perforated sheets. I soak them in hot water with unscented Dawn Powerwash for at least 15 minutes, followed by a thorough wipe down with lemon juice, then rinse really well.

Do you "dock" your cookies or overcrowd your baking sheet? The wetness looks like the butter is steaming. I poke once with a fork in the center of the cookie. It helps to get the heat to the inside and release any steam build up. Also, try to leave some room around each cookie.

Is there a hot weather streak where you are? I know i sometimes see this if my dough accidentally gets a little warmer before it hits the oven than the normal amount of "chilled" i try to keep it. It happens quick in a warm kitchen sometimes and a toss back into the freezer for a couple minutes first helps. If you know it's not that, disregard!

I use two silicone sheets to prevent those corners and sides from burning. I still put baking paper as well on top of the silicone sheets

The humidity at my house is like 10000% lol. It’s been ruining my cookies and other stuff. Maybe a dehumidifier could help?

Im not in love with silicone baking sheet never figured out why ppl liked them so much. Certainly to each his own though, we all use what we like? Right? but like you said, you’ve used them before you never had this problem so you wouldn’t think that is the problem. This def looks like an underbaking. Could your oven have slipped? Do a temp check?

I use baking parchment paper on regular cookie sheets and never have issues.
