They just cut them off the stem. It's the person catching it that has good aim.

Did we watch the same video? The catchers remain stationary while several fruit hit their burlap sacks repeatedly. Sure, the catchers have to be carefull, but they are not the ones aiming they are being aimed at.

Yea, they’re just underneath the fruit and it falls straight down once cut…
