It's a recipe I stole from one of my roommates, and it is so damn good. Mind the calories though haha
Utensils: 26cm (11inches) Springform Pan or similar sized baking tray, waterbath to melt the chocolate, whisk or hand mixer, big bowl to mix everything in
300g Leibniz Butterkekse (potential substitute could be Graham Crackers)
100g Butter
300g Cream Cheese
300g White Chocolate (we use Milka)
500g Quark (potential substitute could be cottage cheese)
500g Strawberries
1 Vanilla Bean
Chocolate Shavings for decorating
First, crush the cookies in a plastic bag into tiny pieces. Melt the butter. Mix the Butter with the crushed cookies and press the mixture into the baking tray, forming a solid layer on the ground. Put into the fridge.
Now, melt the white chocolate. Make sure you get rid of any lumps. When its nicely melted, set aside to let it cool off. In the meantime, wash your strawberries. Pick the nicest ones and put them aside to decorate the cake in the end. Chop the remaining strawberries into very small pieces.
Once the white chocolate is cooled off a bit, add the cream cheese, quark and the vanilla to a big bowl. Whisk, while slowly adding the white chocolate. We don't want the white chocolate to form chunks again, so its best to slowly add it while whisking.
Once the mixture is done, take your baking tray out of the fridge. Take a scoop of the cream mixture and apply a thin layer on top of the cookie-butter base. This is so the strawberries don't turn it mushy again. Now add your chopped strawberries. Then top those with the remaining cream mixture.
Now take your last strawberries, cut them in half and put them on top of the cake. Add chocolate shawings, and put into the fridge for at least 4 hours :) I usually leave it over night.
I am no master baker, and tbh I rarely ever make desserts myself. But this cake is just so damn good, I keep coming back to the recipe. So I felt like I should share it :) Keep in mind tho, this is VERY calorie dense xD
